Commanderie de Bordeaux in Paris - 4th Induction Ceremony

Commandeur Vincent-Eric Baudino tells us about the 4th Induction Ceremony and Dinner held in 2020, organised by the Commanderie de Bordeaux in Paris on 16th October.

"Since the Gala event planned for 13th October 2020 had to be cancelled, our Commanderie was able to organise, “on the spot” , an event at the Museum of Hunting and Nature, just three days later.

We didn’t realise that our event would be held on the eve of the curfew and like Cinderella, we had to make our arrangements to be home before the clock struck midnight.

With a small gathering, it was the occasion to induct two new Commandeurs, Arnaud Féty and Olivier Seigneur, in the presence of their wives, Claude Carrière and Lilian Féty.  Altogether, eleven people were present.

The event was nonetheless a great success and we enjoyed the cuisine of Pierre Meneau, starting with a Carpaccio of sea bass marinated in citrus, accompanied by tangy cream, followed by duck and foie gras French pie made in collaboration with Maison Vérot, before continuing with tender veal cooked at low temperature and served with small vegetables glazed in veal sauce flavoured with Tonka bean….. We finished with a delicately thin apple tart and salted butter caramel.

And what about the Bordeaux wines, you may ask ?
Aperitif, a white wine, Château Bouscaut 2012, which we also kept for the starter, adding another white wine, Château du Champ des Treilles 2012. If the tasting of Bouscat won all the votes, Champ des Treilles scored some points when savoured with the starter. With the next course, we had two vintages of Château Cassagne Haut-Canon, la Truffière, 2008 and 2009. An impossible choice ! For the tender veal, we tasted two wines of the 2008 vintage, Château Phélan Ségur and Château La Conseillante. Let’s say that that significant difference between these two wines largely fuelled discussions between Commandeurs. Lastly, we discovered Château Haut Lagrange 1995, in a double magnum and with the dessert of delicately thin apple tart, we decided to add Château Guiraud 2002, which received unanimous praise.


We would have gladly continued for a little longer, but as they say, “the hour groweth late” (already 11pm) and we had to leave lest our horse-drawn carriage should suddenly turn into a pumpkin… ! In short, it was the kind of induction ceremony and evening we love.
