Commanderie
September 17, 2024Master class evening with Claire Villars-Lurton. Commanderie de Bordeaux in Paris
Antoine Juaristi, Master of the Commanderie de Bordeaux in Paris, brought us together in the magnificent board room of Herbert Smith Freehills for this beautiful evening with Claire Villars-Lurton who has amazed us by his dynamism and passion to tell us his experience in biodynamics for many years (2003). We had a great pleasure to taste the wines of his castles, with a surprise from the Americas, all accompanied by delicious dishes chosen with the greatest care by Commander Xavier Aubercy and the information pack prepared by Commandeur Arnaud Saiag, in charge of the Wines and Communication committee.
We tasted, in the following order :
· Inspiration Vin Orange 2022 – Vin de France
· Ceres 2022 – AOC Haut-Médoc
· Château La Gurgue 2009 et 2019 – AOC Margaux
· Château Ferrière 2009 et 2019 – 3ème Grand Cru Classé de Margaux
· Château Haut-Bages Libéral 2009 et 2019 – 5ème Grand Cru Classé de Pauillac
· Acaibo, de la propriété de Gonzague & Claire Lurton en Californie – 2016
The wines were accompanied by delicious dishes:
* Pâtés en croute by Arnaud Nicolas: poultry and duck foie gras (without pork) and free-range pork with pistachios
*Potted meat with Espelette chili pepper by Arnaud Nicolas
* Jambon de Paris – by La Prince de Paris (last craft manufacturer of ham from Paris - its brine is prepared with Guérande salt)
*Laguiole from Fromagerie Monbleu (cheeses selected by Pierre Gay, who has the title France’s Best Craftsperson)
• Cannelés from the small firm Dupuy
